Good grief subdjoe I'd be big as a house if I cooked like you! LOL, it isn't the COOKING that does that. It's the EATING that does it! But, yeah, it is one of the hazards of liking to cook and being fairly good at it.

(rearranges the rocks around the edge of the fire pit, puts some fresh rails in, lays down some tinder and kindling, uses a stub of candle to help get things going)
Been a while. Kinda chilly tonight, thought we could use a bit of a fire. (adds a few small sticks to the slowly building fire, stacks a square around the kindled fire, a few sticks across the top).
Been an interesting few months. Things could be better, could be a hell of a lot worse too. (takes off glasses and sticks them into an inner pocket, takes off hat to fan the fire some) Yeah, not real happy with the politics now, but so long as the Constitution stands, I figure the Republic can get through the next few years. (sits back on his heels, looks up at the dripping sky and shoves he hat back on his head, sets tripod over fire and hangs water pot, arranges some medium sized chunks of wood aroung the fire to dry a bit before feeding them in)
Once this burns down a bit I'll get some coffee goin'. (rummages through mess bag and haversack, finds boiler can and coffee) Hey, still got some meal here, maybe make some hoe cakes too.

A few layers of good wool, some oilskin, make sure my boots are well greased against the wet, should be fine. (pulls some coals to the edge of the fire, tosses some more wood on. Dumps a few handfuls of coffee into the boiler can, adds some water, puts it on the coals)
'bout 10 minutes for the coffee.

I just found this on a shooting forum. Well, the ladies auxillery to it. Posted by a shooter and her husband (who also shoots). So, Mink, Saunterelle, you likely shouldn't read further since anything to do with guns is EEEEEE-viiiilllll.
BEST EVER MUSHROOM SCALLOPED POTATOES
8 cups thinly sliced & peeled potatoes 1 large onion 1 tablespoon butter/garlic butter 8-12 large fresh mushrooms, thinly sliced 2 cans Cream of Mushroom soup 1 cup milk (skim, 1%, 2%) 1 1/2 cups shredded Cheddar cheese sea salt, to taste freshly ground pepper, to taste paprika, to taste
Combine soup, milk and spices in a bowl. Sauté thinly sliced onion rings in 1 tablespoon butter.
Lightly oil a casserole dish or glass lasagna pan with olive oil.
Arrange potatoes in a single layer in bottom of dish. Drizzle soup mixture over top.
Arrange onions and mushrooms. Sprinkle cheese over each layer.
Continue to layer in this manner until all ingredients are used up.
Bake at 375°F for approximately 1 hour or until potatoes reach desired texture.
For a crispy top layer, uncover during the last 10-15 minutes of cooking time.

Subdjoe, are you trying to keep me from a new recipe? Besides, I have nothing against guns and understand both sides of the issue as I have said before, remember? I do think, however, you guys get a little gung-ho or obsessed with them sometimes... Anyway, thanks for this recipe. I make a dynamite scalloped potato dish myself and the added mushrooms and paprika is a great idea! I use canned evaporated milk that makes it very creamy and have used gruyere cheese along with the cheddar and jack. I blanch my potatoes whole, let them cool a bit and it takes less time in the oven ( this way you don't have to cover the potatoes in the oven and the top is nicely browned) and use shallots, diced tiny and sprinkle them as I layer the ingredients. I love the use of sea salt and only use freshly cracked pepper. With this economy, potatoes are looking good year round.

Yeah, lots of ways to play with this. I was thinking substitute a can of cream of chicken soup for one of the mushrooms. And for a real treat, use extra rich milk. This will also cook up well in a dutch oven.
"I do think, however, you guys get a little gung-ho or obsessed with them sometimes.." How so? Just trying to protect our civil rights from government intrusion. Or ... should we just let that be legislated away?

Yeah, I tried both cream of chicken mixed with cream of mushroom because that was all I had......came out pretty good. I think if I was to use a rich milk, I would try half and half, but still use evaporated milk with it. I prefer a casserole or lasagne pan to a dutch oven, but I agree it could work both ways, afterall, food is food and you use what you have. I suppose the dutch oven would work best while camping I'm not cut out for that discussion, which is why I stay away from it.

You will argue till blue in the face about the "right" to abortion, or the "right" to same sex marriage (neither mentioned in teh Constitution), but you will stay silent on protecting a right of the people clearly enumerated and protected in the Bill of Rights.

And for dessert: Most Dangerous Chocolate Cake in the World
--------------------------------------------------------------------------------
The most dangerous cake recipe 5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) a small splash of vanilla extract 1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!
Now this is an odd one for me - a MICROWAVE one. I don't think I have everposted one of them anywhere before.
